How can I deactivate the selling of items?

Try changing the Sell price in the Config file to 0 and see if that works for you.

do I have to edit each item individually?  WTF That will take a long time -.-

When that would happen to me, I would just close the window and reload the plugin through the F1 console (oxide.reload Shop), provided the names were set up right, and the names would then show up. May work for you.
