Head Bags produced when using the Skinning Knife would they come under skinning or is it a separate mechanic?

I am actually not sure; I haven't messed around with those DLC items.

What would i need to add if i wanted to count items found through killing bots? also what would i need to add if i want to also count road signs?

Next update supports NPC corpses.

Barrel supports road signs and barrels.

for collecting Resources i have noticed that a few will not update

1 - Pumpkins

2 - Corn

3 - Picking up diesel from Oilrig or Airfield

4 - crude oil

5 - smelted sulphur ( i smelt it as no other way to get it smelted and does not count)

Is there a command to wipe progress for player/all and/or onwipe?

I run into the same issue especially with sulfur, could this be fixed or could smelting be added as source/acquire option?

I tried all furnaces and as well the skill tree perk which gives refined ore when mining, nothing seems to trigger it.

Yeah the sulfur was a mistake. Remove it from the config and you should be good.
