Yes, configs from v1 will be automatically converted. In case that doesn't work you can also import them manually.

@The_KiiiingI just noticed in V2 it doesn't appear to be possible to add an attachment item.
In V1 for some loot boxes I would have a bow, and with that bow would come 10-20 arrows as an addon item to the bow. V2 doesn't appear to have that functionality anymore?

This is the normal behavior. The configuration only applies to collectable hemp and not to hemp grown in planters.
