The unlink button is working, there's no issue. 

But

The player is verifying on Discord and then leaving our Discord channel, but they continue playing the game. It's very frustrating

Once a player unlinks it removes them from the Discord permissions however the permissions remain in game. I'm running Carbon btw. 

There is nothing in the plugin that stops the player from playing if they leave the discord?

That's not what he was saying. 
Anyways, make sure your server is connected so it can remove the permissions in game.
I have not heard of anyone else having issues with players running the unlink command
