How can I add more than one passenger and make them shoot?

you can set this value to true and spawn passengers as scientists and they can shoot
you can more passengers just copying current example of passenger, if you don't really understand how to work with json u can use sites like json beautify and json editor

They don't shoot, their names don't change, and their loot tables are being overridden by another plugin when scientist option is true

is companion working fine while passengers not?

with loot table, health and names i don't really cant help you, because it being overridden by other your plugins
mb you can set whitelist for trafficdriver's bots in ur plugins

companion works passengers does not.
