please tell me theres a way to turn off sale option for all items global. doing to every single item seperately is insane bro

No there's no option like that however default data files with Items comes with same sell price for all items, you can use "replace  all" feature inside any text editor and change all sell prices to 0. If you dont know how to do that feel free to send me your Items file and I'll do it for you.
