Yes it's normal. In the setup, there is the “AntiItems” plugin which allows you to create a secret inventory for players. In this hidden inventory, there is precisely wood or sulfur. This is why, when you try to collect it, it is added to the one already present in the secret inventory.

If you want to disable this, simply delete the “AntiItems” plugin from your server. However, players will no longer have unlimited resources.
